New Test Method for Acetic Acid Bacteria Enumeration at Eurofins Microbiology Laboratories, Inc. of Milwaukee, WI
June 4, 2024 - Eurofins Microbiology Laboratories, Inc. of Milwaukee, WI is proud to announce the development of a new test method for acetic acid bacteria enumeration, intended for utilization by clients in the beverage industry. To best serve the needs of the beverage industry, Eurofins Microbiology Laboratories is offering this test as part of several new beverage packages, as well as ad-hoc.
Acetic acid bacteria (AAB) are a group of bacteria which oxidize sugars or ethanol and produce acetic acid (vinegar) during fermentation. The presence of AAB can be associated with spoilage in beverages, causing an undesirable sour taste, and could lead to premature end of shelf-life, consumer complaints and recalls.
The method was developed based on the European Brewer’s Association guidelines, though ours is validated for a shorter turnaround time (72 hours) and uses an agar that includes a chromogenic reaction (color change) in the presence of acetic acid, which contributes to more accurate results.
The new AAB test and beverage packages are intended for use by clients producing beverages and are applicable to both alcoholic and non-alcoholic products and clients that can beverages.
