New Gluten Test Method Available
Regulatory bodies like the U.S. Food and Drug Administration (FDA) and European Commission require food producers to list ingredients on packaged foods and beverages in order to protect consumers who have allergies and other food hypersensitivities, like coeliac disease.
According to Codex Alimentarius (CODEX STAN 118-1979), European Commission Regulation (EC 41/2009), and the U.S. Food and Drug Administration (FR Doc. 2013-18813), products marketed and labeled as “gluten-free” must contain less than 20 parts-per-million gluten.
