Ask an Expert Series - Topic #15

Can you detect Bacillus cereus in a food product containing a probiotic Bacillus coagulans?

"The primary concern with B. cereus is its ability to produce enterotoxins when present at high concentrations of around 100,000 CFU/g. This means that our main goal is not to "detect" but to show that the concentration is below an acceptable threshold. For this purpose an enumeration method works well. Two media for enumeration of B. cereus are listed in FDA BAM: MYP and BACARA. Of these media, AFNOR validation has shown that BACARA agar does not support the growth of B. coagulans, however MYP does. For this reason we would recommend a method that uses BACARA agar for enumeration of B. cereus in food products formulated with B. coagulans." - Megan Brown, Principle Scientist of Microbiology of Eurofins Microbiology Laboratories, Inc.
