I am developing a new or reformulated food/beverage product and I am concerned about risk related to pathogenic and spoilage microorganisms. What should I do next?

"When developing or creating new products, gathering more information on how your ingredients and processing affect the safety of your food is important. It is ideal to perform a product and process assessment to identify any potential microbiological food safety and spoilage concerns based upon your ingredients, processing steps, finished product specifications, and finished product storage conditions. In addition, you may want to consider inoculated challenge studies with pathogenic or spoilage organisms pertinent to your product and process.
